Cast Iron Pepperoni Pizza
In the theme of snow days, we thought we'd continue cleaning out our refrigerator instead of having to venture into the snow. What did I see? Fresh pizza dough that I had gotten previously from Harris Teeter - winning! I had the other ingredients on hand, so I thought I'd give pizza a go in the cast iron. We want to try it out on the Big Green Egg, but that'll have to be another day, when there isn't 10 inches of snow. Make this fun by getting creative with your toppings - enjoy!
Ingredients:
16 oz pizza dough (usually you would only use half of this, but I wanted a thicker crust)
flour, for handling the dough
1 tb olive oil
~ 4-6 oz pizza sauce
~1 cup shredded mozzarella cheese
~1 cup shredded Italian blend cheese
dash of Italian seasoning
handful of turkey pepperoni slices
Directions:
Preheat the oven to 450 degrees. Coat the bottom of the cast iron with olive oil. Roll the dough out, using flour as needed, and place in the cast iron so that the edges are as tight as you can get them. Try to pinch the edges up a bit. Spread the pizza sauce on evenly across the pizza. Top with the shredded cheeses, pepperoni, and Italian seasoning. Bake for 15 minutes, but keep an eye on it.
