Chicken with Artichoke Hearts and Lemon
I've had this recipe on my list for quite some time, and it did not disappoint. It's very light but full of flavor. This recipe is from one of my favorite cooking blogs that I've followed for years, skinnytaste.com, and I just adapted this a little. To be a bit healthier, I tend to use chicken breasts more than chicken thighs, but this still came out terrific! I served this alongside some roasted Winter vegetables. This was pretty easy for a week night meal! Definitely give this a go - enjoy!
Ingredients:
3-4 chicken breasts
6 oz jar marinated artichoke hearts
1 clove garlic, minced
1 tsp oregano
salt and pepper, to taste
1/4 cup feta cheese (reduced fat)
2 tb fresh parsley chopped
squeeze of lemon
Directions:
Combine the chicken with the artichoke hearts, with the liquid, in a ziploc bag. Marinate and refrigerate for approximately 30 minutes. After it's marinated, drain the liquid. Add garlic, oregano, salt and pepper. Broil on low about 6 inches from the flame for approximately 10 minutes, or until brown. Turn the chicken over and cook the chicken an additional 8-10 minutes or until the chicken is fully cooked. Top with the feta and place back under the broiler for 2 minutes. Remove from the oven and top with the parsley and lemon juice.
