Roasted Garlic Parmesan Fingerling Potatoes

I love fingerling potatoes - they're easy to slice and cook, and they're just so cute and bite size! This recipe is super easy and fast. It would be a great side for pretty much any meat in my opinion. This go around, I decided to try a store bought product that is a single serving sized, pre-mixed herb butter. You simply pop the 1 tb of butter into whichever recipe you'd like and let it melt with its delicious herbs. Give it a try!

Ingredients:

~1 lb fingerling potatoes, cut in half

1-2 tb olive oil

salt and pepper, to taste

1-2 tb herb butter (already mixed)

fresh parsley, for garnish

grated parmesan, for garnish

Directions:

Preheat oven to 400 degrees. Coat the potatoes in the olive oil, salt and pepper. Distribute evenly on a roasting/baking pan so that they are in a single layer (I put them on aluminum foil). Bake for 20 minutes and when removed from the oven, stir in the herb butter. Top with the parsley and parmesan and serve.
