Blackened Rockfish
It's no secret that I'm a sucker for fresh seafood, especially fish. The grocery store had some great looking rockfish, so I took advantage and cooked it up for dinner earlier this week. This was a super easy recipe and I paired it with some honey orange brussel sprouts which were prepared from Whole Foods. All I had to do was heat up the veggies - definitely a nice time saver! As for the fish, you can use whichever seasoning you like, but I wanted to try a new one I purchased called "Slap Yo Mama". It's made in Louisiana and someone recommended it to me. It gave the fish a nice kick, but wasn't too overpowering. Definitely try this for a quick week night dinner! Enjoy!
Ingredients:
1 pound rockfish filets (I had the skin removed and them cut into portions)
dash of blackening seasoning (I used Slap Yo Mama)
juice of half a lemon
nonstick cooking spray
Directions:
In a greased baking dish (I just use nonstick cooking spray), place the fish filets and brush each with lemon juice. Top with the blackening seasoning. Bake at 400 degrees for approximately 13-15 minutes, depending on the thickness of the fish. Serve with your favorite starch or vegetable!
