Blueberry Coconut Flour Pancakes

My husband, Nick, has had this recipe to try for quite some time. He's doing a Transformation Challenge through Orangetheory, and in an attempt to be more healthy, wanted to try these paleo pancakes. I was skeptical - not going to lie - but they actually were quite tasty! I ended up making these for him this past Saturday morning. They came out really fluffy and full of flavor. I did decide to kick them up a notch with some fresh blueberries in them and on top - because why not?! Definitely give these a try!

Ingredients:

1/4 cup coconut flour

1/8 tsp baking soda

pinch of salt

1/3-1/4 cup coconut milk (I used unsweetened)

2 tb organic, cold-pressed coconut oil

3 eggs

1-2 tb honey (I did about 1.5)

1/2 tsp pure vanilla extract

grass-fed butter for cooking and topping

maple syrup, for topping

~ 1/4 cup blueberries (plus another handful for topping)

Directions:

Mix the eggs, coconut oil, and honey thoroughly together. Add the coconut milk and vanilla extract. Add in the coconut flour, baking soda, and salt. Mix, but don't over mix. Add in the blueberries and gently stir them in. Heat a large saute pan or skillet and melt ~1/2 tb butter. Place the pancake mixture in a measuring cup to easily pour into the skillet. I made two large pancakes, but you could make them a little smaller to get an additional pancake our two out of the batter. Top with your favorite toppings and enjoy immediately!
