Steamed Pork Dumplings

Sorry for the slew of recipe postings today, but I finally have the time to get my recipes from the last two months uploaded! I've been traveling for work pretty non-stop, so I apologize for the low activity recently. Hopefully this will give you some ideas for the holidays! These steamed dumplings are delicious and you just need a bamboo steamer. Depending on how many I make, I have 2 steamers and sometimes have them going at the same time. This menu is for the pork version, but you'll see in the related post that I also have a recipe for steamed shrimp dumplings. Both are delicious! Ingredients

Dumplings

1/4 cup minced scallions

1 lb ground pork

2 tsp minced, fresh ginger

1 red bell pepper, diced (about 1/2 cup)

2/3 cup diced cabbage (I used Napa cabbage)

1 garlic clove, minced

1/4 tsp sesame oil (unflavored)

1 1/2 tb reduced-sodium soy sauce

2 tb fresh coriander, chopped or 2 tsp dried coriander

1 egg, lightly beaten

wonton wrappers (1 package - you'll have some leftover and these are usually found in the produce section in the grocery store)

water (for wetting the wonton wrappers

Sauce

1/2 tsp sugar

1/2 of a scallion, diced (I use white and green parts)

1 tsp minced, fresh ginger

2 tb reduced-sodium soy sauce

splash of water

Directions

In a bowl, combine the scallions for the dumplings, pork, ginger for the dumplings, bell pepper, cabbage, garlic, oil, soy sauce, coriander, egg, and salt and pepper to taste. Chill the filling for at least 1 hour or overnight. When ready, put about 1 tsp of the filling in the center of each wonton wrapper. Have a small bowl of water nearby and dip your finger or a small brush in the water to wet the edges of the wonton wrappers (I usually do two sides). Fold the wonton wrapper over in the shape of a triangle and press the edges until they're secured. TIP: Use parchment paper or wax paper to lay the dumplings on until you cook them. Find a pot that will fit the bamboo steamer on top. Bring about 2-3 inches of water to a boil with the bamboo steamer on top. Place ~5 dumplings in each steamer at once and steam for approximately 7 minutes. Set aside and keep warm with plastic wrap. Continue steaming until all are cooked. For the sauce, mix all Sauce ingredients in a bowl.
