Chicken Sausage Hashbrown Casserole

This dish was also a result of us being snowed in this weekend, which was fantastic! This made plenty to have for leftovers, and I think it was even better the following day. This is also great for a group, and the original link provides a lot more detail around the process and options for preparing it the night before. I came across this recipe and thought I'd adapt with what I had on hand, in terms of sausage. Treat yourself, or a group, to this delicious casserole - you won't regret it! Enjoy!
Ingredients:
16 oz shredded hashbrowns (I used the Simply Potatoes ones in the refrigerated section)
8 oz chicken sausage (I sliced links, but you could use up to 16 oz ground sausage)
2 cups shredded cheddar cheese
6 eggs
1/2 cup skim milk
1 tsp salt
1/2 tsp black pepper
diced chives, for garnish (optional)
Directions:
Preheat the oven to 350 degrees. While that is preheating, brown the sausage. Grease a 9x9 pan and layer the potatoes first. Then, top it with the sausage and then cheese. Whisk together the eggs, milk, salt and pepper. Pour the mixture over the pan evenly. Bake for approximately 30 minutes, or until set. Top with chives before serving.
