Mediterranean Branzino

Happy New Year! I hope everyone has enjoyed their holidays. I'm just getting around to posting a recipe I made before Christmas. This was extremely quick & easy, along with being delicious! This would work for any mild, white fish, so feel free to get creative. I cooked this up for a quick weekday lunch, but you could easily have this as dinner. Enjoy!


Ingredients:

1 fresh branzino (I had the seafood counter clean and prep for baking/roasting)

1 tb capers, drained

1/2 lemon, juiced

1 tb olive oil

dash of dried oregano

dash of salt and pepper


Directions:

In a baking dish, spray with nonstick cooking spray. Combine the olive oil and lemon juice and brush over the fish. Top with the oregano, salt, pepper, and capers. Bake at 375 degrees for 12-15 minutes, depending on the size of the fish.
