Slow Cooker BBQ Pork Loin

It's that time of year for the slow cooker to become your best friend. I've mentioned this before, but it really is a nice thing to have in the kitchen. Not all meals need to cook in the slow cooker all day long, nor do they all need a lot of prep. This recipe is a good example of that. This recipe only cooked for 4 hours, and to be honest I think it would've been good to go a little earlier. I didn't decide to cook this until about 2:30pm, so it could even be somewhat last minute. I used my favorite seasonings and sauces, but feel free to swap those out for your favorites! When it comes to BBQ sauce, I'm a North Carolina girl and love that vinegar taste! Enjoy!

Serves: 4

Prep Time: 5 minutes (if that)

Cooking Time: 4 hours

Ingredients:

2 pound pork loin

Dizzy Pig seasoning (enough to cover the roast on all sides)

Well's "Hog Heaven" BBQ sauce (I purchased this in North Carolina, but if you can find it, BUY IT)

Sides:

green salad (throw together your favorite salad mixture)

canned green beans (heated on stove for 10 minutes with salt, pepper, and garlic powder)

Directions:

Place a slow cooker liner in the slow cooker (this will save you a lot of cleaning - I love these!). Trim the pork loin of any excess fat (you'll want to leave a little so it doesn't dry out). Coat the pork loin with the Dizzy Pig seasoning (or your favorite seasoning choice) on all sides and place in the slow cooker. Pour approximately 1 cup of your favorite BBQ sauce over the pork. Cover and cook on high for 4 hours. About 3 hours in, I placed another 1/2 cup or so of the BBQ sauce (optional). Let sit for about 5 minutes once you take it out of the slow cooker, and then slice and serve!
