Bacon Egg Cups

"Breakfast is the most important meal of the day." -- my Mom echoes in my ears when I hear those words, as she has told me that my entire life! In reality, I often skip breakfast just because of time and indecisiveness. Previously I made a lot of frittatas, but was wanting something different. These baked bacon and egg cups were SO easy. You can get creative and use Canadian bacon, regular bacon, ham, etc. but for these I used thick cut bacon. I didn't have chives on hand, so left those off, but they would've added the perfect touch. You can make however many of these you like...Enjoy!


Ingredients:

6 large eggs

6 slices of bacon

1/4 cup shredded cheese (I used freshly grated cheddar)

salt and pepper, to taste

chopped chives, to taste


Directions:

Preheat oven to 400 degrees. In the meantime, spray your muffin pan lightly with non-stick cooking spray - you don't want much as the bacon has a lot of fat. Place the slices of bacon in the muffin tin, wrapped in a circle - one slice of bacon per muffin cup. Bake for 10 minutes. Remove from the oven. Crack one egg into each muffin cup and top with cheese. Bake for another 8-10 minutes, depending on how you like your eggs cooked. Remove and top with chives, if desired.
