Sausage Breakfast Casserole

To continue with my belated Thanksgiving posts, this was the breakfast casserole I made for the group the morning after Thanksgiving. It is terrific for a group and is also great as leftovers, heated up. You can get creative with the type of meat you use in this, but I opted for breakfast sausage. The great thing about this casserole is that you can mix it all together the night before, and just throw it in the oven the next morning! Enjoy!

Ingredients:

24 oz shredded potatoes (thawed or frozen; I used thawed)

salt and pepper, to taste

12 eggs

2 cups half and half

1 tsp salt

1 1/2 cup shredded cheddar cheese

1 1/2 cup shredded pepper jack cheese

2 cups cooked sausage (of your preference, or ham)

Directions:

Grease a 9x13 inch pan. Add the potatoes to the bottom of the pan. Sprinkle with salt and pepper. In a large bowl, whisk the eggs together. Add the half and half, all of the cheese, and the sausage (once you've let it cool). Pour the mixture over the top of the potatoes evenly. Cover with foil and refrigerate for 2 hours or overnight. Bake covered in foil at 350 degrees for . 90 minutes. Let rest for 10 minutes before serving.
