Caprese Skewers

Today is your lucky day - you get a double dose of Handy Eats recipes! As you'll see in my previous post, I was fortunate enough to be asked to cater the Human Rights Campaign's Steering Committee Holiday shindig. It was a lovely event, and these skewers were a huge hit! These are very easy to assemble, but can be a little time consuming depending on how many you're making, so just allow yourself some time for that - or make it a party and invite some friends or family to help you! For the recipe below, I used some bulk ingredients that I bought from Costco, so this made a hefty amount. I did not count, but this allowed for about 3 platter refills, each platter likely holding about 30 skewers. Enjoy!

NOTE: I used the marinated mozzarella balls from Costco, which became quite messy with the olive oil they're stored in. I'd make sure to drain the mozzarella balls prior to assembling these.

Ingredients:

1 tub mozzarella balls, drained from juices, and cut in half if too large

1 pint cherry tomatoes, halved if too big

1 pint yellow, cherry sized, tomatoes, halved if too big

3 packages of fresh basil, stemmed and torn into bite size pieces

balsamic glaze for drizzling

4" wooden skewers

Directions:

Thread each skewer with a half of mozzarella ball, basil, yellow tomato, basil, another half of mozzarella ball, basil, and a red tomato. Continue this process until you're done with the ingredients. When in your desired platter, drizzle with the balsamic glaze. Enjoy!
