Cajun Tripletail Fish with Zucchini Medley

The husband and I both had a craving for fish last night, so I decided to check out Mazzaro's Italian Market to see what selection they had. For those that aren't familiar, Mazzaro's is this AMAZING Italian Market that puts Italian Store in Arlington, VA to shame. They have a great butcher shop with fresh seafood selections as well. The tripletail looked delicious - so I thought we'd give that a shot! It's a really tasty white fish. I'm a huge fan! You could substitute the fish for any similar textured fish (snapper, grouper, etc.). Enjoy!

Ingredients:

1 lb fresh fish, cut into individual portions

~1 tb cajun seasoning (I prefer Slap Ya Mama cajun seasoning)

1/2 lemon

non-stick cooking spray

2 tb vegetable oil (1 tb for the cast iron and 1 tb for the vegetable skillet)

~1/2 tb parmesan cheese, grated

1 zucchini, diced

1 squash, diced

1 small onion, diced

~1/3 cup crushed or diced tomatoes

salt and pepper, to taste

Directions:

Preheat the oven to 425 degrees and place the oiled cast iron in the oven while it's preheating (only use 1 tb oil and distribute evenly in the cast iron). Brush the fish with the lemon juice and top with the Cajun seasoning and parmesan cheese. When it's ready, remove the cast iron (don't forget the oven mitt!) and place the fish in the cast iron. Place back in the oven for 12-15 minutes, depending on the thickness of the fish. While that's cooking, heat a skillet with the other 1 tb of oil over medium-high heat. Saute the zucchini, squash and onions for approximately 10 minutes, stirring occasionally. Reduce the heat if necessary. Add the salt, pepper, and tomatoes. Stir well to combine. Serve the fish over the vegetable mixture.
