Mediterranean Tuna Salad

Happy Hump Day! This week has been the first week I've done meal prepping in quite some time. As part of this journey, a friend of ours chipped in and is partaking in the goods! They work in the service industry and needed some lunch options that you can eat cold, since they're often in between lunch and dinner shifts and don't have time to heat anything up. The first thing I made was one of my favorites - Asian Chicken Salad, and then I decided to try a new spin on tuna salad. This Mediterranean tuna salad turned out very yummy! It's full of flavor and very light - no mayo! This is great with crackers, by itself, or on a salad! Enjoy!

Ingredients

Tuna Salad

3 cans high-quality albacore tuna, packed in water is my preference (5 oz cans)

2 stalks celery, diced

~1/3 cup marinated artichoke hears, diced

1-2 tb capers, diced

1 shallot, diced

~ 1 cup fresh parsley, chopped

dash of salt and pepper

dash of red chili flakes (optional)

Dressing

1 1/2 limes, juiced

1 lime, zested

2 1/2 tsp dijon mustard

1/3 cup olive oil

dash of salt and pepper

In a large bowl, combine all of the tuna salad ingredients. Combine the dressing ingredients and shake well to combine. Add about half of the dressing to the salad and stir to combine. Add more dressing, as desired.
