Seared Scallops with Lemon Garlic Parsley Sauce & Lemon Potatoes

Happy Friday! I decided to use this Lemon Garlic Parsley Sauce to serve with my Seared Scallops last night, which I served with Lemon Potatoes. This sauce was pretty easy to make and would go well with any white fish (or these scallops!). If you're looking for a light, healthy, and delicious meal - give this a try. Enjoy!

Ingredients:

2 tb lemon juice, freshly squeezed

2 tb fresh, finely chopped parsley (flat-leaf)

1 clove garlic, minced

1 tsp lemon zest

2 tb olive oil

1/2 tsp salt

1/2 tsp pepper

Directions:

In a small mixing bowl, whisk together the lemon juice, parsley, garlic, and lemon zest. Slowly whisk in the olive oil and season with salt and pepper, if using. Serve over the fish or scallops once ready.
