Air Broiled Honey Mustard Salmon & Brussel Sprouts

Happy Monday! Today's an exciting day -- it's the first time I got to use my Ninja Foodi Oven! I decided to try the Air Broil feature tonight with some fresh Scottish Salmon and Brussel Sprouts. I cooked these as a sheet pan dinner, and it came out delicious! Enjoy!


Ingredients - Salmon:

1 lb fresh salmon, cut into portions

2 tb honey

1 tb dijon mustard

salt and pepper, to taste


Ingredients - Brussel Sprouts:

1 lb brussel sprouts, stemmed and halved

splash of balsamic vinegar

salt and pepper, to taste

1 tb olive oil


Directions:

In a bowl, combine the brussels with the balsamic vinegar, salt, pepper, and olive oil. Spray the sheet pan with nonstick cooking spray and layer the vegetables and salmon in an even layer. Top the salmon with the salt, pepper, and honey mustard mixture. Reserve 1 tb of the mustard mixture to drizzle over the fish after it's done. Cook on Air Broiler for 12-15 minutes, depending on the thickness of the salmon.
