Instant Pot Egg Bites

Happy Tuesday! I hope everyone had a good long Memorial Day weekend, remembering what it stands for and enjoying time with family and friends. I wanted to share this breakfast recipe, as it's a very easy thing to make and have on hand for the rest of the week. I became a little obsessed with the sous vide egg bites when they came out by Starbucks and Dunkin' Donuts both. After doing some research, I realized they can be made in the Instapot pretty quickly! All you need is the silicone egg mold and the metal rack for the Instapot, which you can purchase pretty cheap on Amazon. The silicon mold I bought can be found here. The fun thing about these egg bites is that you can get creative and add whichever fillings you'd like - I started with bacon and cheddar. Give these a go and enjoy! Note: These will last in the refrigerator for up to 5 days.


Ingredients:

4 eggs

1/3 cup cottage cheese

1/4 cup shredded cheddar cheese

2 slices cooked bacon, crumbled into small pieces

dash of salt and pepper


Directions:

In a mini food processor or blender, combine the eggs, cottage cheese, cheddar cheese, salt, and pepper. Blend thoroughly until smooth. Pour 1.5 cups of water into the Instapot. In the silicone mold, evenly distribute the bacon and the egg mixture. The mixture should be filled about 3/4 of the way. Cover the mold with a piece of aluminum foil or parchment paper. Place the mold on the metal rack and lower into the Instapot. Lock the lid and ensure it's in Sealing position. Select Pressure Cook on High for 9 minutes. Once done, let the steam release for 10 minutes. When you remove the mold, let sit for 2-4 minutes. You can then flip the mold and the egg bites will come out easily onto a plate. Enjoy!
