Lemon Parmesan Chicken Zucchini & Squash Skillet

Hello Everyone! It's been a while since I've been able to post, so apologies! We've moved into a new place in St. Pete and it dominated our lives for a bit. I finally got around to cooking in the new kitchen this past week, and wanted to share the recipe. This recipe can be done with or without orzo/pasta, but we chose to throw in some orzo. You could also get creative with the vegetables you toss in, but the squash and zucchini went really well. Enjoy!


Ingredients:

1 pound chicken breast, cut into 1-inch chunks

3 tb olive oil, divided

salt and pepper, to taste

3 tsp Italian seasoning

1tsp garlic powder

1/2 tsp onion powder

1 zucchini (or 2 small), sliced and halved

1 squash (or 2 small), sliced and halved

1/3 cup finely shredded parmesan

2 tb fresh parsley (I left this out because I didn't have any)

1 lemon, juiced

1 lemon, zested

1/4 box orzo, cooked as instructed


Instructions:

In a bowl, combine the chicken with the lemon zest, a dash of salt, pepper, 2 tsp Italian seasoning, 1/2 tsp garlic powder, and 1/2 tsp onion powder. In a skillet, heat 2 tb olive oil and cook the chicken over medium-high heat for 3 minutes on each side. Once browned, remove from the pan and keep warm on a plate (covered, if necessary). Add the other 1 tb olive oil and the squash and zucchini with the remaining herbs. Toss and cook the vegetables over medium heat for approximately 4-5 minutes. Add the chicken back to the pan with the lemon juice. Serve over the orzo with parmesan and parsley. Enjoy!
