Slow Cooker Pulled Pork

If you're looking for an easy weeknight meal, which requires very little effort, this recipe is for you! Generally speaking, pulled pork recipes use a pork butt or pork shoulder, but I used pork loins since they were on sale (and are a little more lean). This took about 7 hours in the slow cooker, but I probably could've gotten away with 6 hours. This is super easy and was really tasty - enjoy!


Ingredients:

~ 3 pounds pork loin, butt, or roast

~ 8 oz barbecue sauce (I am a fan of North Carolina/Mustard style)

1/2 yellow onion, sliced (optional)

BBQ rub (enough to rub over the entire cut of pork)

~ 1/3 cup water

dash of hot sauce, to your liking (I used about 2 tb)

dash of red pepper flakes (optional)

Cole slaw, for topping (optional)


Directions:

Spread the onions on the bottom of the slow cooker, if using. Lay the pork on top of the onions and rub the pork with the BBQ rub. Cover with the sauce and pour a little water around the edges of the pork (not on the pork or else it'll wash off the rub). Close the slow cooker and cook on low for 6-7 hours, or high for 3-4 hours. When done, shred or chop the pork to your liking and put back in the sauce to coat, and then serve. I like to serve the pork with cole slaw on a bun, but you could go bun-less!
